Meet the Merchant Square Lockhouse Head Chef!

Merchant Square Community: Yaz the Head Chef at Lockhouse

This month we are getting to know Yaz from the Lockhouse team at Merchant Square, Paddington.

 

For our May Merchant Square Team feature we found out a bit more about head chef Yaz at Lockhouse, London.

 

Hello YAZ what is your role at Lockhouse?

I am the Head Chef at Lockhouse on Merchant Square!

Where are you from? 

I am originally from Morocco but have lived in the UK for most of my life.

What do you like about working in Merchant Square? 

Not only do I love the canal side location of Merchants Square, I also really enjoy the relaxed vibe that comes with a waterside destination. It’s like a mini Morocco (but much, much colder!)

Our fabulous and diverse guests and the team that I work with make Lockhouse and Merchant Sq great place to be every day. We aim to produce great tasting, modern food and I get real enjoyment putting together new and exciting dishes for the good people of Paddington Basin.

When you’re not at work, what do you like to do in your spare time?  

I like to relax after work, so anything from a Netflix session to an evening out with friends. Although I must admit that even when I leave work I still think about new dishes and new menus. I get inspiration from local producers, restaurants as well as TV and books …everywhere I go there seems to be a smell or a flavour that gives me a new idea.

What is your favourite dish at Lockhouse?

It’s hard to choose a favourite dish at Lockhouse as everything is top drawer (maybe because they’re my creations), but if I was pushed I’d probably go for the Locked & Loaded Burger. It is a biggy with two beef pattys, double American cheese, Wiltshire Bacon and all the trimmings and it was a National Burger Award winner last year!

What is your biggest strength in life? 

I like to think that my biggest strength is my motivation and determination. Without it I wouldn’t be where I am now and I think it’s a really important quality in life.

Finally, if you could be any food, what would you be and why?

If I was one type of food then I would definitely be Mediterranean using locally sourced British ingredients. There’s your Blind Date quote right there.
