Our street food trader Grate Rosti shares with us how to make the perfect Potato Rosti at home.
Ingredients you need:
- Half a White Onion
- A couple of medium Potatoes (preferably waxy)
- Your choice of toppings (They recommend teriyaki chicken and sriracha mayo!)
A course grater will also be needed!
First grate your potato and onion and put the onion in a large mixing bowl.
Put the grated potato in a muslin cloth or a clean tea towel.
Pick up the cloth with all the grated potato in it to make a parcel. Squeeze about 90% of the starchy liquid out so the rosti doesn’t fall apart in the pan!
Mix the potato with the onion and season generously. You could also put garlic, spices and other root vegetables such as beetroot or sweet potato.
Melt a large knob of butter over a medium heat. If you are vegan, vegetable oil will work well too. Grate Rosti use vegetable oil in their food truck!
Tip your mixture into the pan and press it down with a potato masher or anything similar. You need to pack it together quite tightly together to make sure the mixture doesn’t break when you flip it.
Once you have cooked the rosti for 10-12 minutes (make sure it’s crispy by checking with a spatula) on one side you are going to flip it. The best way is to pop a plate on top of the rosti and flip the pan over to avoid it breaking.
The Rosti should look brown on the top. Make sure to stick some extra butter or oil around the sides so the uncooked side also gets to cook in it.
After 10-12 minutes your rosti will be cooked and you can eat it straight away! Rosti’s are delicious on their own, crisp on the outside and gooey in the middle.
However if you want to accompany it with something, then the world is your oyster. Grate Rosti’s most popular topping with customers is teriyaki chicken and sriracha mayo and is very delicious!!
